Epitomizing rosé that is greater than ever and more thoroughly enjoyable as a sophisticated, food driven wine. Grapes are selected from vines that grow from parcels of superior quality. The best quality lots bearing old vines consisting primarily of Grenache, Vermentino and Syrah. Harvesting from sunrise to noon, with optical grape sorting and destemming and slight crushing at 7-8C to avoid oxidation. 90% free run juice and 10% first slight pressing with no maceration. Alcoholic fermentation in new wood and second year demi-muids. With an extra year of aging before release, this wine has both great fruit and a rich, spicy character. The concentration of ripe raspberry, strawberry and cherry flavors are complemented by rounded tannins and slight bite from hints of white pepper on the finish.
