Giancarlo Russo has a broad professional career in strategic marketing and sales, education, and, of course, food and wine. He has been a Master Cheese Taster since 2000 ( ONAF-National Organization of Cheese Tasters), and an instructor for master taster courses, as well as a judge for international cheese championships. Giancarlo has been a professor of both undergrad and graduate students at the Insituto Lorenzo de’Medici in Firenze, and Università Gastronomica di Pollenzo UNISG (Slow Food), in Pollenzo, Italy, teaching courses including Food and Wine Pairings, Trends in Italian Cuisine, The Wines of Italy, and Sustainable Food. In addition, he has been an editor for Slow Food, a consultant for Barilla, a partner in Fiaschetteria Pistoia Tuscan Restaurant in New York City, and the Chairman of Italian Wine Pairings, a company dedicated to providing professional, in-home cheese and wine tastings. Giancarlo is currently the State Sales Manager for Vinifera Imports in Miami.
